it was not captain america's shield behind iron man on stark's worktable
UPDATE 23.05.08: i have been pwned. why? well according to Dark Horizon's interview with Marvel Studios president Kevin Feige (with regards to the Shield) - he "did confirm the object glimpsed in Tony Stark's workshop in "Iron Man" is part of the character's shield."
it sucks to be pwned ... actually, it doesn't, becoz i had nothing to loose (except my personal value of opinion and judgement, maybe?) BAH... nah, im just playing the victim here :p (cheers for the headsup, TSR!)
the benefits of watching IRON MAN the second time around, was that I knew WHEN to expect and lookout for the particular scene where the previous featured reports of Captain America's SHIELD were noticed on-screen - which was noticeably absent from the earlier trailer (and suspected to have been added-in laters - unconfirmed rumor).
The sequence in question starts when Pepper Potts walks downstairs to Stark's basement to find his in his Mark-3 armor, being removed by servitoids. The single un-edited scene was a moving panning-shot, approximately less than 5-seconds' worth, before it cuts to the POV of Pepper Potts. After that, you'd not see the table-top again. (Drats)
This is my own interpretation of what was seen on the work-table behind Tony Stark = It was not specifically a single tangible 3-dimensional shield - per se. ... CLICKETH FOR DETAILS
Made of different 3-dimensional pieces - of differing thickness and materials (hence surface reflections on the main/central "black"-body) - placed and layered on top of each other, on the table, to form a collage of what looked like the shield in question. Most noticeable to me was the 3-pointed STAR-like shape ("arguably" so - for the sake of visual recognition) - missing 2-bottom points (to complete the "star").
Again, tis of my own interpretation and recollection (one day old memory LOL) - make of it as you will, I'm just here to share - and of course YOU may have you're own opinion on this.

Regardless, one definite thing for me, was that the second viewing was still as awesome a ride, if not better - becoz I knew what not to miss! LOL - and the (Credits) End Sequence was just as sweet - along with a coupla hoots from a buncha fans in the cinemas with us, and that is cool enough for me :)
